1. Banana

The best advice is to skip sugar at all.

2. Chia seeds
Chia seeds are grain-free and gluten-free, making it an excellent ingredient to use in baking. Not to mention that they are a wonderful source of magnesium and omega-3 fatty acids. If you have no egg in the fridge, chia seeds might be your safe bet.

3. Soft tofu

4. Flax seeds
When it comes to healthy egg substitutes, flax seeds are a fabulous alternative to chia seeds. In a small bowl combine 3 tablespoons of water with a tablespoon of ground flax seeds and let it sit for a few minutes or until completely absorbed and viscous. Since flax seeds have a nutty flavor, you can use them instead of nuts as well. I usually use flax seeds instead of eggs in my pancakes.

5. Applesauce
Applesauce is usually used to replace oil in baking, but it turns out that we can use it instead of eggs too. 1/4 cup applesauce will be enough to replace one egg. When buying applesauce, choose an unsweetened version. I opt for a sweetened version since I almost don’t use sugar when baking.

6. Baking powder, corn oil and water
Mix 2 teaspoons of baking powder, 2 tablespoons of water, and a teaspoon of corn oil (vegetable oil might be an option too, though it is not healthy) together and use it in your batter to replace one egg. Simple, yet tasty.

Being a cautious mother, she checked the banana that her daughter had ate and it revealed a reddish black streak down the core.

The discoloration was due to a mold caused by a type of fungus called Nigrospora. Although many would assume that all mold is toxic to humans, Nigrospora is actually different.

This wasn’t a recipe I’d tried myself, because I’m not much for bananas, and just hadn’t had a desire to make banana bread. I made these for my kids and was surprised to realize that I actually liked them. This is actually a big deal for me, since this is one of the first things with banana I’ve been able to eat in years! In fact, I might actually like these more than the original muffins.

Coconut Flour Banana Bread Muffins

Grain Free Banana Bread & Muffins

Ingredients

5 Eggs
2 bananas
1/4 cup coconut oil or butter (softened)
1/2 cup coconut flour
1 tsp baking soda
1 tsp vanilla
small amount of milk to thin (may not need)
Instructions

Preheat oven to 400 degrees
Put all ingredients in medium sized bowl
Using strong whisk or immersion blender (recommend!), mix until smooth and well incorporated. If batter is too thick, add a little milk to thin, but don’t let it get runny at all.
Put into greased muffin tins- i use a 1/4 cup measure to make pretty even sized. Batter will be somewhat thick.
Bake for 13-18 minutes until lightly browned and set in middle.
